I've been having some major issues with blogger as of late, that's why you haven't seen any posts in the last few days.
Here's a great summer recipe to tide you over until I can figure out the glitches.
(While in the process of making this today, I decided that it was pretty much a chunky version of the guac. Rex makes, minus garlic powder. No wonder I liked it so much.)
- Fresh Mexican Salsa
- (recipe found at bigoven.com)
- 2 whole Avocado
- 1 whole Lime Juice of
- 3 tablespoon Cilantro
- 1 medium Onion diced
- 3 medium Roma Tomatoes diced
- 1/2 Lemon juice of
- 1/4 teaspoon Cumin
- Salt to taste
Dice avocado and combine with other ingredients.
Do not blend -- all ingredients should be fresh and in chunks.
Finally, consume massive amounts of the salsa until you feel ready to explode, leaving less than half of the batch for your loved ones.
(Okay, I added that last part!)
